Carrot Cake Energy Bites
INGREDIENTS
2 1/4 c. Quaker Oats (quick or old fashioned, uncooked)
2 c. finely shredded carrots
2 tsp. ground cinnamon
1 c. finely chopped dates
2/3 c. Finely Chopped Almonds
water
2/3 c. coconut flakes
DIRECTIONS
Stir together first 5 ingredients. Add water, one tablespoon at a time, as needed for shaping consistency.
Form the dough into 24 heaping tablespoon-sized balls. Roll lightly in coconut flakes.
Refrigerate one hour before eating.
